What are the benefits of purchasing one-quarter beef?

  • Locks in your family's supply ahead of time
  • Saves shopping time and travel
  • Avoid future price increases
  • Gives you a choice of cutting options (when ordering one-half or more of a beef or a whole hog):

Standard cutting options are predefined for mixed quarters.

This is a list of the options that you can receive for a Standard 1/4 Beef order:

Amounts and quantities will vary based on the size of the carcass.

CHUCK CUTS

Chuck Roast, Flat Iron Steak, Ranch Steak, Brisket, Short Ribs

RIB CUTS

Delmonico Steak

LOIN CUTS

New York Strip Steak, Filet Mignon, Sirloin Steak

ROUND CUTS

London Broil, Rump Roast, Eye Roast, Sirloin Tip Roast, Soup Bones

Choices you need to make:

Ground beef or patties?

Select either 5 lbs. chipped steak or 5 lbs. beef cubes

Select one of the following items: heart, liver, tongue or tail

You may elect to receive bones and fat if you wish

How much space do I need in my freezer?

A rule of thumb is one cubic foot of freezer space for each 35-40 pounds of cut and wrapped meat. Allow slightly more space when the meat is packaged in odd shapes.

A quarter beef could be a little over 100 pounds cut & wrapped meat, but will vary depending on size of actual animal and if you choose to take the bones, the percentage of fat you keep in the ground meat, if you choose to save the fat, etc.

 What is the cost?

You pay an amount based on the hanging weight plus butcher costs.

Beef mixed quarters: $7.20/lb. hanging weight

Butchering costs:    $175 (rough estimate) for a mixed quarter beef
