What are the benefits of purchasing one-quarter beef?
Standard cutting options are predefined for mixed quarters.
This is a list of the options that you can receive for a Standard 1/4 Beef order:
Amounts and quantities will vary based on the size of the carcass.
CHUCK CUTS
Chuck Roast, Flat Iron Steak, Ranch Steak, Brisket, Short Ribs
RIB CUTS
Delmonico Steak
LOIN CUTS
New York Strip Steak, Filet Mignon, Sirloin Steak

Choices you need to make:
Ground beef or patties?
Do you want 5 lbs. chipped steak or 5 lbs. beef cubes?
Would you like to include heart, liver, tongue or tail? (may select 1 of these 4)
Would you like to receive bones and fat?
How much space do I need in my freezer?
A rule of thumb is one cubic foot of freezer space for each 35-40 pounds of cut and wrapped meat. Allow slightly more space when the meat is packaged in odd shapes.
The final packaged beef could weigh a little over 100 pounds, but will vary depending on factors such as the size of the actual animal, whether or not you choose to take the bones, the percentage of fat you keep in the ground meat, and whether or not you opt to save the fat.
What is the cost?
You pay an amount based on the hanging weight plus
butcher costs.
Beef mixed quarters: $7.38/lb. hanging weight
Butchering costs: $200 (rough estimate) for a mixed quarter beef
